Ingredients (for one)
Ready in 15 minutes
1 Medium ripe Avocado*
Handful Cherry Tomatoes
1 Cooked Lentils*
1 tsp Extra Virgin Olive Oil
½ tbsp Grainy Mustard
¼ Lemon Juice
½ tsp Cider Vinegar
½ tbsp Coriander Seeds*
Salt & Pepper to taste
Cut the cherry tomatoes in half, shave carrots and courgettes, particularly for the carrot, the thinner the better.
Marinade the carrot silks with olive oil, vinegar, mustard, lemon juice, a touch of salt. Let it sit (the longer the better).
Cut the avocado into chunks, dry fry in a heated frying pan for about 3 minutes - keeping an eye on them, turn the avocadoes when slightly dried and golden.
Mix the lentils, courgette silk and marinated carrot with the tomatoes and fresh coriander. Season to taste.
Serve hot crispy avocadoes on the salad, voilà enjoy !!
*This is a super idea for when you are craving avocado but it's not ripe enough (we all know that feeling, such a disappointment moment for avocado lovers !!)
*Avocado is naturally rich in one of the best plant-fat on the planet, thus there’s no need to add any extra oil to fry.
*It’s always the better to prepare your own Lentil and Marinated-Carrot salad from scratch, but if you don't have time, cooked lentils or carrot salads can be easily found in organic stores. Just avoid adding extra salt as they're usually full of it!
* A tiny touch of coriander seeds makes all the difference!
